"Casino chefs demand high production. We can address that. The other thing they care about is reliability, and we can address that, too," he said.
In terms of production levels, Cohen emphasized that Infinity fryers need only a few seconds to recover from preparing one batch of food to the next. This fast recovery time is achieved through a wrap-around flue that exposes as much oil to heated air as possible, as well as a pre-mix burner system that generates the maximum amount of heat per unit of natural gas.
"Our pre-mix burners and flue design ensure quick recovery times," he said. "Some fryers may take a couple of minutes to recover, but our fryers recover in under 10 seconds, load after load." Such features, Cohen added, not only generate high productivity, but also reduce energy usage.
Of course, high production levels mean nothing if the equipment is not reliable. To that end, all Infinity fryers are backed by a standard two-year parts-and-labor warranty. "Our two-year warranty addresses a lot of issues that arise simply because of the wear and tear casino chefs put on their equipment," said Cohen.
In addition to a two-year warranty, Infinity offers fryers that also meet casino foodservices' need for reliability. Many casino chefs prefer traditional knob-based controls, since (rightly or wrongly) they perceive these controls to be sturdier than computer-based control panels, noted Cohen. The Infinity G2845 model is equipped with the type of one-knob control panel with which many these chefs feel most comfortable.
While Infinity is able to provide the features and benefits most casino foodservices seek, because the company is relatively new in the United States it is still in the process of building its reputation here to gain a significant share of this market, Cohen noted.
